OK I just needed to make this clear especially for the people that were answering. Chimichangas?? that's not Mexican. Nachos? that's a US invention that sounded Mexican. Taco bell, yes it sounds mexican but have you seen one in Mexico? (no way!)
And burritos...I've only had them in the US. They are also a US invention. And for the girl that likes Spanish food, it's paella. (BTW, that's great)
I'm sorry, I was pissed lol ...

Cochinita Pibil

chopped pork, marinated in achiote sauce, then wrapped in banana leaves and foil and slow cooked for 4-5 hours.

served with Mexican white rice and stewed red onions with habañero slices on the side. (with plenty of tortillas and Yucateca style "Leon" beer!)

(Now THAT's real Mexican food!)

Carnitas.

It's pork prepared by a slow process, and parts of it are crispy, darkened, almost fried in character, while parts are smooth and mellow and fall apart good, like a roast.

If they serve it and there are no browned, crispy parts, they either did it wrong, and aren't following a classic recipe (for the cripsiness is what seperates it from any old pork chop), OR you got "the middle of the cake" with no extra frosting or roses.

It's not Mexican but Spanish "pallea" I don't know if I spelled it right. It a rice fish, and chicken dish.

I live in mexico but Im peruvian,, I love anything with a good chilli based sauce. apart from that, enchiladas , red or green ones are awesome,, and mole.. mo-le and pozole and esquites and punpkin flower or shroomy tacos

Pozole - then I squeeze a lemon in it and add onions and oregano. I'm also a vegetarian, so I pick out the pork meat.
