I don't know if this is exactly what you are asking or not, but I beleive you that, in iTunes, you have a bunch of songs for which the check box to the left of their name is NOT checked and you efficiently want to have all them BE checked. Here's how:

In iTunes go to the "Edit" menu. Choose "Select All." Then right click on one of the now-selected songs. If you are using a Mac with a single button mouse, hold control and click instead of right clicking. One of the options that will come up in the right click menu is "Check selection." Choose that one. Now all your songs will be checked.

** per your edit of what you mean is how to choose songs to be transfered to your iPod; the above method, I believe, is exactly what you are looking for; the checkbox being checked is what iTunes used to determine what songs get sync'd to your iPod **

Click on top one, go to bottom and on windows I think it is shift-left click to get all of them in between.

On the Mac, under edit there is a select all option
