When you talk about acoustic music does this include drums/kit or what instruments would you include?

I wouldn't consider drums (other than small hand drums or perhaps a lightly-played snare) to be acoustic instruments. Acoustic music (as others have noted) means non-electric and non-amplified. It's almost impossible to hear such music when there's a drum kit pounding away along with them.

Basically, acoustic instruments are the ones that you don't have to plug in to make music with. They may be miked up for larger venues, but that doesn't really count. Regular drum kits are acoustic instruments, as are pianos violins, saxophones, and trumpets . Electric guitars, samplers and synths definitely are not.
You could include the human voice, I guess, as well as just about anything in a symphony orchestra.

Acoustic basically symbolizes resonance, or how much sound an instrument or voice can make without amplification. Drums would be included with this. Big band music, as loud as some of it was in the 40's-50's, would be considered acoustic with the exception of the singer who SOMETIMES used a microphone.

Acoustic "should" mean music that is not amplified. Basically it's music with instruments that have an organic sound and do not need amplification. Now some of these instruments ARE amplified to fill a large space.

Acoustic music can refer to music that solely or primarily uses acoustic instruments, such as the acoustic guitar, banjo, mandolin, piano, cello, and voice. The category includes much contemporary folk and singer-songwriter music, as well as bluegrass music. It can also refer to instrumental music that is created using acoustic instruments.
