X-mas decor goes up right after Halloween.
As for the crowds, I think you should be OK until about the 22nd or 23rd. Most people come around then and through the weekend.
I think you chose a good time to come.
Just make sure you hit Magic Kingdom on the earlier days (it gets the most crowded).

Disney is not crowded in November at all!! I have an annual pass and know pretty much the bad times to go to the parks, and right now it has been great because there are much fewer people in the parks, compared to crowds in the summer!! You should have no problem next month with lines or weather!!
MGM has started putting up the Xmas lights for the Osborne Family Christmas light display, but they do not turn them on until later... they have to finish putting them up! They may have some things up and ready for Christmas by that time, but they do have some THanksgiving events that occur in November. Mickey's Very Merry Christmas Party begins on November 13 this year. The Holiday around the World Celebration at EPCOT begins Nov. 24. So there will be some xmas stuff for you to experience!
As far as crowds around Christmas and New Years, it can get pretty crowded!! I went for New Years last year, and it was INSANE!!! It was like being in a sea of people, crammed together. There were cast members directing traffic!! I have been the day after Christmas and it wasn't to bad... but it is definitely more busy around Christmas.

The first time I went to Walt Disney World was in mid-November of 1997. I don't recall it being very crowded at all. I mean, it's Walt Disney World, and obviously, on any given day there's going to be thousands of people in and out of the parks. People will say "well, it won't be crowded because kids are in school," but you have to remember that Walt Disney World is the number one travel destination in the world. People from nearly every other country in the world will be visiting the parks, too. No matter what there's going to be a lot of people, but I will say that the crowds aren't as bad as they are over Christmas and New Year's. And according to the Walt Disney World website just prior to Thanksgiving and right after Thanksgiving is a time of low attendance.
According to AllEarsNet this is what will be taking place for Christmas events while you're on vacation at Walt Disney World:
EPCOT Holidays Around the World should begin by November 24th, the day you're leaving.
The Osbourne Family Spectacle of Lights at the Disney-MGM Studios will begin November 14th.
Mickey's Very Merry Christmas Party at the Magic Kingdom will begin November 13th.
Mickey's Jingle Jammin' Jungle Parade at the Animal Kingdom Park begins November 13th, too.
The only Christmas festivity that will begin after you leave is the Festival of the Seasons at Downtown Disney (the 25th.) But according to http://www.wdisneyw.co.uk/otherxmas.html the festivites at Downtown Disney will begin November 23rd this year...
And I'm not sure about the Resort decorations, such as the gingerbread house at the Grand Floridian Resort or the gingerbread carousel at the Beach Club Resort.
It looks like you'll have just enough time to see some of the holiday festivities and decorations. Have a great vacation!

Right now is great! Not too many people. And weather is good, too. Go in December, especially December 25, and it is a mad-house! Thousands of people. Don't know when they put up the christmas decorations. Just call them and ask!

My friend goes every single year at that same time. She brags about the no wait lines. I can't stand it any more so we have made palns to go next year.
