Use biological soap powder (the stuff you get for washing machines) make up as would for handwash and scrub into area with small brush (toothbrush or something) then dab up with clean water on a cloth.
the enzymes break down the blood and may take several attempts if its dried in though, this also works wonders for wine stains, milk smells, if your cat sprays etc

Sounds grim.. Keep them out of the room in question! We do. During the day when we're out, the cat only has access to certain rooms...
But I'm hoping the kitchen's not the room you mean, cause carpet in the kitchen is a bad idea all round!

sponge the area with cold water,and blot dry.repeat until the stain disappears. if this does not work, use a carpet-spotting kit followed by an application of carpet shampoo.
if blood is dried, use hydrogen peroxide solution with 2.5 ml added ammonia or glycerine solution mixed with warm water then treat as above

you must not have windows screens or doors are open all the time. why bother cleaning at all . as long as the cat keeps killing things you will be constantly cleaning . try dawn dish detergent and warm water and a scrub brush and sometimes I have used Dow scrubbing bubbles when I don't have anything to clean a stain on my carpet.. but your stains are far out , but try Dawn.

Spot Shot it comes in a aerosol can blue with a orange cap, just spray it on scrub it with a brush than wipe clean with a clean white towel.

WHY your cat is killing things IN your house is beyond me.... Aren't these critters OUTSIDE or do you have things like this running loose in the house...in which case the stains on the carpet isn't the big problem!

Try salt water solution, and get the cat a cat collar with bell on it so birds know he's around, and he won't be able to kill anymore

Try peroxide. I know it takes out fresh blood, not too sure about old? But you might also try oxy clean. It works awesome!
