before bedtime. He tries to turn the taps off when the bath is full, but they both break off in his hand, and the water continues gushing out. Soon the water level is rising rapidly in the cell, and he's floating near the ceiling on the top of the water, his head angled dangerously against the roof of the cell. He's tried shouting for the warden but no one can hear.... how does he survive?

There would be no bath created by this element. Since that, your question contain story that belong to unrealistic. Since the question is not realistic. The answer to your question is possibly unrealistic.
From the aspect of unrealistic, the guy can survive when he start to think real. Since the dream will stop when you start to undream (wake up), and you start to believe he can survive.
There would be no cell, with tap, without a drain hole, where the water will flow out... drained. Since that, it is unrealistic. Since the guy doing unrealistic thing, he suppose to be not real.

hmmmm..... is there a window?
Is this in an action movie where we can be guaranteed that the hero playing the man in the cell will be saved at the last second by his partner opening the door, causing all the water to go gushing out.
No wait.... it turns out that the prisoner has mutated during his time in prison and he now has gills.
I'll be the first to admit that I am logically impaired, which can quickly be backed up with my university calculus marks.

the cell is a pit with bars on the roof, he can breath as the water floods out.

The pressure of the water blows the door out but I thought that cells had bars on them not doors, or is that on telly!!!
