Either will work (assuming we are talking about the new Intel Core Duo iMacs), however I would say if you are looking to do the occasional editing, the iMac is fine, but if you are looking to do it professionally, you might want to consider the Pro...

The iMac will work great. Even my Mac Mini does an incredible job editing video.
