It's because the country was divided between the Danes in the north (the Dane Law) and the Saxons in the South.
Hence:
Essex = East Saxon
Sussex = West Saxon
Wessex= West Saxon
Suffolk are the South Folk
Norfolk - The North Folk.
You can see a sahrp change in place names when you cross the dividing lines.
Also people in the north are twice as likely to have viking genes as those in the South.

-Sex is a saxon word for area; Sus-sex - south area, middle-sex middle area, wes-sex west area. es-sex - east area. west sussex is a subdivision of Sussex (the others being East Sussex and Brighton and Hove)
The saxons never got up north; that area was ruled by the Danes and Vikings, they had different names for areas.
