Sometimes when I use my pots and pans, there are circular rainbow patterns in them. When I add water, the rainbow colors go away. What's going on?

it is the little tiny scratches on the surface of the metal,
this is similar to the scratches made on the surface of a grating in a spectrophotometer,
you can also see a similar phenomena on the surface of a CD
