Because corn fields grow in thick and tall. It hides it better from people seeing it. Not to mention when there is police helicopters looking for it.

Many reasons. It's hidden, easy place to smoke it and, if the "gardener" was careful about how he planted it, it can also look as though it had grown wild. This happens a lot in my area.

Hemp is very tolerant of adverse growing conditions. It requires little fertilizer and is pest and disease resistant.
Corn on the other hand is a very "hungry" plant and hides the hemp plant very well.
