My husband is Chinese and his family live in Hong Kong, we visit on a regular basis and eventually plan to move out there. It's a fabulous place so I can see why you are going!
My advise would be to learn some Cantonese if you can't speak it already as not many people speak English in my experience, I can recommend the Pimsleur learning CD's for conversational Cantonese. They are really good and I can just about string a sentence together now!

There is a large ex pat community in Hong Kong check out the website http://www.hkexpats.com/ OR http://hongkong.asiaxpat.com/
maybe you could make some friends there.
Other than than Lan Kuai Fong is great for a good night out (maybe a bit touristy!)
Also check out the Hong Kong tourism website for fun stuff to do :-)
Another tip would be to eat out, try Maxims restaurants they are great food bustling and friendly places the one we go to is in the new territories in Ma on San but there are a lots all over Hong Kong, I actually had my wedding reception at the one near Central last year! mmmmmmm

There is a massive expat population in Hong Kong and loads of people like yourself, so there are plenty of bars if you want to make friends with Westerners. Best places to go are Tsim Sha Tsui, over on the Kowloon peninsular side of the harbour, and on Hong Kong Island itself there are two concentrations, Lan Kwai Fong (in Central, the main business district) and Wan Chai. People are SO friendly I promise you won't have any problems.
If you are going to work in a school you will probably find the staff really nice, and some of the younger female teachers will probably want to hang out, but generally it can be a bit more difficult coz of the language barrier.

Why don't you try answers international? Look at the bottom of this page and click on the Hong Kong flag I'm pretty sure you can find friends from that country! That's all I can tell you girl, I'm Mexican and I don't know no other way. I hope it's helpful and good luck!!!
