My gaydar goes off when I observe body language. Some gay men have a feminine quality in the way they move. Whether they know it or not. Some definately in the way they dress....a little feminine. Stereotypical doesn't work. Guy who like Show tunes, fashion, shopping doesn't make them gay. That is personal preference. For me its body language and then there are some that slip right under that gaydar and that is good because they don't get the bullshit.

Mainly having sex with other men.
I don't think there's anything universal. Gay men may do things to gently broadcast their status so they can meet others, but I don't think those things are necessarily universal. There was a comedy routine on the 'blue collar comedy tour' where one of the comics described being asked to remove his cowboy hat in a new york bar because it 'was how gay men dressed', and he replied to the bartender that where 'I come from, they have haircuts sort of like ... yours'. There's probably some truth in that. A style of hair or dress that might seem 'gay' in a small town might be normal hetero behaviour in a big city, while wearing chaps in a big city screams gay. So its situational. I suspect the same thing may be true with music etc.
I suppose the only 'quasi' consistent thing would be actions that are very effemininate relative to the norms of the area. Not 100% accuracte, and many gay men are not effeminante, but its probably a good clue.

People who like interior design, fashion, dancing, show tunes, broadway musicals, Judy Garland, Liza Minelli, Barry Manilow and those who have sex with other men.
Also, those Congressmen from Florida who send IMs to cute 16-year-old boys.
