Well the best way is just copy and paste the certain folders and files you want to the external device, (you can select multiple files at a time in the same folder by holding control while you click them, this is good for copying a lot of files from a folder without having to copy the files you don't want from that folder) I am assuming you aren't needing to copy all the windows folders and such and that this is for pictures documents and music?.

See Best way to back up your C: drive is BACKUPwizard in your windows os .
START>Programe files>accesarries>System tools>Backup.
Choose "Let me choose what to Backup" Option, then simply click on C: in My computer then next. choose device on which you want to back up or simply choose other partion.
This will not only backup your data , as well as the settings also.

If you want an exact copy of your current hard drive configuration you will want to get some kind of ghost software.I am includung a couple of links below to a few programs.Hope this helps
