I know there are some former team managers who later took coaching positions -- bench coach, hitting coach, base coach, etc. Don Zimmer and Davey Lopes are just two of them. Who else's career took this path?

There are just too many to list all of them. The New York Yankees had Larry Bowa, Tony Pena, Joe Kerrigan or their coaching staff. There is probably at least one coach on each team that was a former manager...Lloyd McClendon(Det), Tom
Trebelhorn, Hal McRae, etc. etc.

Believe me when I tell you it's too many to count. For the past 100 years there has been a community of baseball people who have been part of the "Good Ole' Boy Network". They hire and re hire the same people. If you research it you will find dozens that fall into this category. Just off the top of my head, Larry Bowa is another.
