for me :
1) Jeff Buckley - Hallelujah
2) Jimi Hendrix - All Along the Watchtower
3) Sinead O'Connor - Nothing Compares 2U
4) Tori Amos - Smells like Teen Spirit
5) Tricky - Black Steel

Shatner's and Hayseed Dixie's versions are a good laugh - not sure they deserve to be in the same list as Buckley though.

Right on... good choices. Especially Jeff Buckley's Hallelujah is one of the best covers ever.
I would also go with Johnny Cash's Hurt (orig. Nine Inch Nails).
To broaden the spectrum how about Coolio's Gansters' Paradise as a cover of Stevie Wonder's Pasttime Paradise?

On what album did Tori do a cover of "Smells Like Teen Spirit"?????? Now I really need to hear this! I am quite sure that once I hear it, it will be my favorite.
Among the other 4, I'd go with Jimi's cover of All Along the Watchtower.

Wow, so many to choose from. Here's what I could manage:
Foo Fighters - Baker Street
Jeff Buckley - If You Knew (most beautiful song I have ever heard)
Vanessa Paradis - One (U2's song, she has a very haunting voice)
Faith No More - Easy (much better than Lionel Ritchie's in my humble opinion)
Feeder - Can't Stand Losing You (awesome cover of The Police)

Not quite sure if it is the best cover version ever but check out the theme form Donnie Darko (Mad World by Gary Jules). This is a cover version of the original song by Depeche Mode. Very appropriate for the movie.

The best ones are when a great vocalist covers a song by great songwriters and really brings out the emotion of the lyrics, like these two:
With a little help from my friends - Joe Cocker
I can't get no satisfaction - Otis Redding
