There are those that go away for short breaks from Friday to Monday so sometimes you get the travellers on those days.
Also some people travel to work on Mondays and stay away from home only to return on Fridays.
Many deliveries are made on Mondays. And also many people go away to school and stay there for the week and come back on Fridays.
Many people go abroad on Mondays or Fridays so airport traffic may be higher too.
Just a few suggestions.

People are rushing around on Mondays in an effort to catch up with the backlog from weekend orders - on Friday everyone want to finish early - hence a mass scramble to get everything sorted.
Sunday may seem heavier with traffice when in fact it is only the old codgers out for their sunday drive - they fear to go above 30mph in the fear that they will not be able to breath at that speed

Simple, people who work a long way from their family may choose to rent locally to their job during the week and travel long distance back on a Friday afternoon, making the return trip back to their area of work on a Sunday evening or Monday morning. Further, those who take weekend breaks are travelling on Friday evenings to maximise weekend time away. Net result - more traffic as the working week begins and closes.

One of lifes mysteries however a lot of people travel in to the cities and stay there for the week on Mondays and then travel back for Friday to be home at weekends and who can blame them. To travel many miles to work must be a total pain not to mention expensive so it must be cheaper to stop over.
traffic is also bad mornings and early evening and when school/college is off we can fly through the traffic it used to make a three quater of an hour diffrence to me travelling to and from work when they were shut woot woot!
Sunday I do not go out in car as you have what I call "Sunday drivers only" have you ever been behind one of those? Hell on earth snail pace and scared of the road most dangerous to all on road.

Monday is the first day of the work week and most people always show up to work. On Friday they are surely to go to work to get that pay-check. Other days in between and weekends they are either off and ill in nature. Therefore traffice will be slowed on these days.

A lot of my work involves me being away from home, thus I travel on Monday, live in B&B and come back on the Friday. I see hundreds of others doing the same, so maybe that at least in part explains it
