Bromate analysis must be able to measure 20 ppb (part per billion). These are trace analysis and usually thought to be difficult to perform.

A sensitive method for detecting bromate in bread by ion chromatography with inductively-coupled plasma mass spectrometry (IC/ICP-MS) has been developed, but I doubt that you have the instrumentation necessary.

If a chemiluminescence method is used, then a method like electrodialysys is needed to clean the aqueous bread extract.
