The atomic theory states that everything is made out of atoms. Hence, Vitamin C is made out of atoms. But when it's mixed with other things (say, some chemicals in lab) there will inevitably be some chemical interactions between the atoms of the Vitamin C and those of the chemicals used to isolated them. There will be some acid created in the process which is bad for your stomach.
