You are spoiled for choice. Peaks District or Dales, The Cotswolds, Malvern. All only a short distance away.

I would book a Hotel in Great Malvern and explore the area around there. (Starting with Knights Cider on the way through to pick up a couple of gallons)

My wife and I spent a lovely romantic weekend at the New Hall Hotel near Walmley village, Warwickshire.
It was owned by the Thistle Hotel group at the time of our stay but is now one of the Bridgehouse hotels.
The link below provides more details.
It's a magnificent old building set in acres of beautiful grounds, with all the facilities you'd expect of a 5 star hotel.

Stratford-upon-Avon is lovely and worth a visit.

Depending on what side of Birmingham you're staying - why not head south into the Cotswolds?

Coobe Abbey in Coventry is fab. Medieval Abbey converted into a hotel where the staff are dressed in Medieval gear. Could book a room there. They also do Medieval Banquetting nights.

The north cotswolds would be nice as well, Glos maybe? I'm a bit biased cause i live here, but there are some really nice hotels in the area.

How about Stratford upon Avon - beautiful countryside, theatre galore and good restaurants. You could try learning a sonnet or two to serenade your loved one too for extra romance! You big softie!
