I would like to start some innovative projects in HR in areas concerning employee relation and training. Any ideas on what are the type of projects that can be done. Thanks.

Be creative. It really depends upon what type of employees you have, your industry, your budget, etc. Get creative. Better yet, go ask them what would interest them.

I used to hold a job that allowed me to see "inside" many of the largest companies and talk to many employees.
General consensus of many employees I would talk to frequently is that the frills (ie. parties and lunches) are just a joke.... people just want to be treated with respect by employers and not as a number. One of the largest companies in the world puts on huge themed parties and tons of balloons everywhere that cost thousands of dollars and many of them employees would rather have that money as a bonus or added to their paycheck.
Many people fear going to HR with problems within their departments, especially when it concerns the management in that dept. for fear of retaliation from management... HR has become a tool for the company when it is supposed to be a tool for the employee... overcome that somehow and you will see a huge difference in job satisfaction.

1) How to handle customer complaints.
2) How to arrange regular management/employee open air meetings.
3) How to assist w/ identification and education for illiteracy.
4) Team assist training.
5) Peer conflict management.
6) Dealing w/ the "Look" from opposite sex.
7) Emergency response buddy system
8) Covering for emergency absence.
9) Peer generated bday celebration policy/baby/retirement
10) Peer "I wish" list i.e. men put down toilet seat, last one w/ kitchen soap would requisition new bottle/clean out refrigerator to bones every Friday etc.

i think you can choose any topic
related to your field of work
there are few which are common ones
research on Pay and allowances, moods for holidays,
flexible working environment, Methods to increase participation of employees, responses in coordination of the habbits and ideas of employers.
