Small holes. Start with a 4 inch trowel, skim, let dry and sand smooth. Then a 6 inch trowel, skim, let dry and sand. Then an 8 inch, etc, etc. It is called feathering and if done right you can't see the patch. Also, if you have a textured wall, be sure and purchase the proper texture. Orange peel, splatter, knock down. If you don't know what it is then ask the people at the store. The instructions are on the cans.

Mix up a stiff batch of plaster for the first coat, apply with a putty knife that is wider than the hole or cut in the wall. Allow to almost dry and then either sand it down to a smooth finish or use a wet sponge to smooth it out. Let this dry completely, then apply a thinner or runnier mix of of plaster over the previous coat. Make sure you cover past the edges of the first patch. Sand or sponge smooth after it is dry. You may have to put another coat on to finis real smooth.

for one hole, any thing that will let you spread the plaster, hold it at an angle and lightly drag it across the patch. Let it almost dry, take a wet sponge and wipe away the ridges. after it dries add two more coats, each one a little wider.
