Because our bodies consist of such a high percentage of water, like 80% (I cannot remember the exact number but it is high).
When you stop to think about it, our whole body depends upon water. Blood supplies every part of our body (organs, bones, muscles, etc,) the nutrients they need to function and water is a major part of blood. The ability to think, see, hear, taste, smell, is dependent upon the blood flow and the blood flow is so dependent upon water. I could get more detailed because it is rather complex, but maybe this (partially) answered your question.

What water does to oranges is what it does to our bodies. We have blood and other fluids, like saliva, bile juice and other countless things made in water. Muscles, all organs and why, even bones contain water to their deserved extents.

Extract water or juice from orange, it is only good enough to be trashed then. If water were not there in our bodies we would be as dead a duck as a stone on the street side.

Water is the "Vital" fluid of all known Life on earth. Due to its molecular structure it helps "transport" the essential elements that life requires to thrive.

As a comparison to our daily lives: Water is the Cars, Trucks, Trains and Airplanes that allow us to live as we do.

WE are made up pretty much the same composition of fluids as the Earth, percentage wise. I would expect mineral wise too, in many ways.

Think of yourself as a Minor Gaia.

Because most chemical reactions will occur only in solution, and our bodies have to carry on thousands of different chemical reactions in order carry out all the physiological processes essential to life and health.

Our cellular base is a 0.9% saline solution. Our bodies are composed of 92.56% of it. The exchange of cations and ions between cellular walls create conductivity and bodily responses. We couldn't do anything without that electrical component.

Because we are about 92% water. Because it hydrates us and help us digest our food. Im sure those arent te only reasons, but I am no medical Doctor.
