I read this late in elementary school and can't find it.

This kid believes he can develop human photosynthesis. His teacher is not too thrilled that he plans to do this as his science fair project and instead assigns him to research lipstick. He goes ahead with his original project, which involves consuming a formula of magnesium-rich foods, including loathed liver, to turn his hemoglobin into chlorophyll (the book goes into quite a bit of detail on this). His teacher, his parents, and the government are quite displeased when he succeeds, but his grandfather is sympathetic. At the end he is the subject of a cover-up and reverts to a normal human, but he manages to turn his teacher into a tree and gets her carted off to Area 51.
