There may be times when someone who has insulted you has had a bad day or in any case, you just don't know where they are at. So, be careful, because their insult may be an offset of the kind of day they are having, or the way they are feeling.
What I would do, and what I did do, when I was insulted in a gas station, I waited till I got outside, and I questioned her about what she said to me in the store. The gas station screwed up my pizza order, and had a new guy training, and it was taking a long time, then I realized after I got out of line, they forgot my bread sticks. This young gal, about 18, says, "You're F---ing it all up, man." I said nothing, even though I wanted to burst out in anger. When I went out to my car, she happened to throw something in the garbage near my car, and I confronted her. I asked her, "Were you referenencing me in there, cuz the attendant screwed up? I am not by any means going to be overcharged for something, and I also did say sorry to you for the wait, and you just looked at me with this dumb look on your face. Whether you were talking to the attendant or to me, it was not very nice at all, and definitely you have no respect for others." She just kind of laughed sheepishly and went to her car. She could have pulled out a knife or gun and shot me. I don't think I used my best judgment.
Sometimes it is best to turn the other cheek, and sometimes it is okay to confront. But the danger of confronting is that it can escalate into something that may be dangerous. When I confronted this little witch, I probably shouldn't have, because I was very angry inside. If it is a good friend, I would leave the situation alone, and walk away, deal with it later, when tempers have ceased. If it is a stranger, in my case, I know I probably should have said nothing, I would walk away. You don't know what they have in their pocket, or if they are on drugs, or if they will follow you home, etc...

I would try to talk it out, but if if the person is ignorant then I have 2 choices:
A. Ignore
B. Fight
Most of the time I choose A, but if that person crosses the line then I choose B.

If it touched upon ideas that I already felt to be true I might feel ashamed or guilty. If not I would remain untouched. Unless it was by a person I was fond of to some extent.

I would tell them they have the easy part over with now. The talking. And if they don't want to physically attack me, then I would tell them I would like to accommodate them playing their game but I don't have time for that since I have grown up.

Ignore it.
You can't insult me. If what you say is true, I have no right to be upset. If it isn't true, it only shows your ignorance, so why should I care?
