Common chinese restaurants in western countries mostly serve those popular, easy to get and inexpensive ones. Some 5 stars Chinese Restaurants serve real good quality tea and limit to a few kinds.

There are varieties of Chinese tea with different classes and prices. The common and popular ones are
Pu'er - a type of black tea
Shou Mei - a type of white tea
Mo Li (Jasmine) - a type of flower tea
Tie Guan Yin - a type of Oolong tea
Shui Xian - ditto
Long Jian - a type of green tea
Liu An - ditto

Oolong tea and Jasmine tea in most of restaurants. However, for very expensive and fancy ones, they use better and expensive tea upon customers' request sometimes. You can ask them and they will tell you what they use.
