From what I can tell, it had its origin in the medieval legal system; it appears on legal documents basically meaning that the actions agreed upon in the particular legal document must be carried out by the specified date, or that certain action had to be performed on a certain date, such as court appearances and the like. Later, the phrase passed into literary use and the common vernacular, indicating a sense of immediacy in the pursuit of an end.
Also, it has nothing to do with kangarros unless you're a kangaroo, then it has everything to do with you.

It means that the most basic part of life...the essence...is to realize time is the enemy, time is the passage of life, and how you use it is the essence of existence. Kangaroos? Hmmm....

"Time is of the essence" means someone does not have much time left to finish something/solve something. and nothing to do with the roos
