Yes, the tendons are soft and the meat is much like ox tongue. A delicacy in most asian countries and in the southern America parts.

If cooked with saffron and Camembert it is. The Costa Ricans prepare a more down home sloth stew and in Panama sloth pot pie is all the rage, hardly a delicacy prepared thusly.
