the irony is that if they didn't advertise, I probably haven't heard of them. I know I've seen billboards for chipotle and st least one commercial and many billboards for the waffle house.
however (I know that this isn't a chain, but it's a cool enough thing that I think it transcends the question) a quick google search pulled up a little place in Fort Lauderdale called "By Word of Mouth"
says Fodor's:
Unassuming but outstanding, this restaurant never advertises, hence its name. But word has sufficed for nearly a quarter century because locals consistently put this restaurant along the railroad tracks just off Oakland Park Boulevard at the top of "reader's choice" restaurant polls. There's no menu. Patrons are shown the day's specials to make their choice. Count on a solid lineup of fish, fowl, beef, pasta, and vegetarian entrées. A salad is served with each dinner entrée. also, a friend from LA told me once that in-N-Out doesn't advertise, but I think he's lying.

As far as TV and radio I've never heard or seen ads for Chipotle, Jimmy John's, Magic Wok, Starbucks and there are many other niche market and/or smaller chains.
However, pretty much every place has some form of advertising. Starbucks has billboards, Jimmy John's has ads in papers, etc..
Some consider just putting a logo on your product as advertising.
Also, I have seen commercials for Waffle House before.

Starbucks. You see em everywhere, but i've never heard about them on the tv, radio, newspaper, anywhere.. it's like they just popped up out of the ground, like mushrooms.
