once you connect you iPod to your white iTunes USB port cord and iTunes is opened, uncheck the boxes to the left of the songs that you dont want on your ipod anymore. they will be removed from your ipod but will stay in itunes library unless you delete them.

Just delete it from your iTunes library and update your iPod.

uncheck the songs that you don't want. the box is right beside the song name, uncheck it and it won't be on the ipod.

Delete it on itunes.
