It all depends on the weather, if there is a lot of rain in late october and early november they will open by mid-november. If there is no rain....evidently no snow. so they open later. Some ski resorts have artificial snow machines, so you might find some slopes to ski on, even though there isn't much real snow. Check which resorts have them before you make a reservation.

P. S. Thanksgiving is not a holiday outside the USA & Canada.... Here in Europe, there si no holiday at that time of year. School children in France however, have what they call a mid-term holiday week. It's usually in the first or second week of november, and if there's snow they go skiing. Make sure your holiday doesn't overlap those weeks.

I live in Europe but I don't ski. However, I had a boyfriend who worked at a ski resort in Switzerland (close to the French border) 2 years ago. The season really starts at the beginning of Dec. Before that, you can't expect much snow. And even at the beginning of Dec., you probably won't get much snow either. He was so bored there until it really started!!! I know because he came to visit me in the South of France for a week-end on his days-off!
But maybe it'll be different this year.

If you plan to go skiing over thanksgiving you need to go somewhere with snow thus going somewhere high up, Tignes and val de sere are high places to go skiing and they have snowfall all year round and its great having that feeling of being at the top of a mountain 3000metres high. Hope it helped!
