...for instance Tchaikovsky's The Sleeping Beauty, Nutcracker, or Swanlake; or Vivaldi's The Four Seasons? I mean the whole group of compositions. Are they called symphonies or what?

The Tchaikovsky pieces are ballets.
Everything has different names according to the instrumentation used, and the kind of structure the piece has.
A symphony, for example, is written for a symphonic orchestra. A piano concerto is written for a lead instrument piano accompanied by an orchestra. Sonatas are pieces written for solo instruments, whether piano or violin etc...
I wish there was a simple answer but there really isn't.

They have different names. For example, the nutcracker is a suite which has multiple parts to it. You may have several symphonies in a concerto etc etc.
