Apollo 1 was named for the astronauts that died during a pre-flight test, but then the missions jump to Apollo 4 after that. What happened inbetween? Were there any missions?

Apollo 2 and three were the test missions of the Saturn 1 rocket, that was used to get to the moon; they did not contain passagers, in case something went wrong, (astronauts are very expensive to train) and so they could do tests and ensure thier calculations were correct.

They were still numbered - they were assisting with the effort to get Armstrong and Co to the moon.

Apollo 2, 3 were test missions of the Saturn I rocket. Each mission that was numbered did not necessarily have to have astronauts, rather it had to be testing something fundamental towards the goal of landing on the moon...
