It's not a "carnival" but at California Adventure they have a awesome ride called Soarin' over California that is really nice and different. I also love the Indiana Jones ride at Disneyland.
Hee Hee... I'm not one for roller coasters, but I like the "different" rides.

The really disgusting ones where you get into the little cars and you go into all these rooms with gory happenings like decapitated people and people getting tortured, etc. I'm not into violence or anything like that but hey, it's just a ride and it gives me an excuse to scream and hold on to my boyfriend for dear life.
