It's probably very easy to do but why would you do it?
You have family and friends who love you. Why would you want to put all these folks through all of this agony that you would cause?

I say don't do it. Get some help for yourself and definitely tell someone that you confide in about your problem.

It's not so hard to pack up and move, but it's harder to stay lost. If you get a driver's license, sign up for utilities, use credit cards, get a job, pay taxes, get married, register a car, buy real estate, have a bank account, get arrested, etc, you leave a trail that a skilled detective can follow. I'm sure it's been done by someone before. My brother tried it.

Whether someone will search for you is up to them. If you owe them a lot of money, count on it!

The best way to completely disappear is a pound of C4 and a detonator. There'll be DNA evidence, but they definitely won't be able to identify you from dental records.

The skipping town bit, is a little harder. It can be done, but is this what you really want to do or just wishfull thinking.
