Twixt? Twixt? How old are you?

There is no difference between chips and french fries - though the frogs would have us believe that theirs are superior to ours.

French Fries or Chips, are potatoes that have been cut and deep- fried (ie french fried potatoes). Called French Fries in North America, the name is usually shortened to " Fries". They are usually known as "Chips" in the United Kingdom and the rest of the Commonwealth excluding Canada. Patatas Fritas in Spain, Frites, Frieten and Pomme-Frites in Belguim, Germany and France.

In North America, "chips" most often refers to potato chips--the crunchy, roughly oval-shaped snacks. Usually you buy them in a bag at a store.

French fries, on the other hand, are typically long and thin (though sometimes they are "thick-cut"), and must be served and eaten mere moments after they're cooked in order to taste good.

Both are made from potatoes.

In the U.K., in parts of Canada, and perhaps elsewhere, "chips" can also refer to French fries. So when I order (in Toronto or London, England) "fish and chips," I'll get batter-fried fish and French fries.

In the U.K., potato chips are most often called "crisps."

Some chips or 'fries' in the Uk are actually made from reconstituted mashed or pulverised potato to make strange shapes, then fried.
Some 'fries' are made from Maize (corn) which I detest but some people prefer them to potato chips.
