Sounds to me that the car was not on level ground when you checked & found none.......

First of all make sure that you pushed the stick in all the way. If you didn't then you have gotten a false reading of "low oil". Most cars have a light or pressure gauge to warn of oil problems- find out which you have and learn to read it and keep an eye on it at all times.
The car may have a leak or is burning the oil away. Lets look at both cases:
Oil leak- The oil in a motor is pressurised so it could leak when the motor is running. Start your car up while parked and run fro several minutes, look underneath for oil. Also when you move the car from a parked space- check for oil on the ground.
Burning Oil- The cylinder rings or valve guides in the motor may have worn causing the oil to burn away. Start your car and look for white smoke coming from the exhaust pipe, (especially when revving the motor up). Usually the smoke in predominant and very noticeable.
Don't let the oil go low at any time as this will do "major" damage to the motor and it will have to be replaced. Check the oil everyday before driving if you do not see any of the above. The short time it takes to check could save you big money.
If you see any of the above then get it fixed.

Always check your car for oil water first thing in the morning or after it has been standing for a couple of hours and make sure it is on level ground also there 2 marks on your dip stick do not let it go below the bottom one and do not fill it above the top one.Regaurding you water there is a mark at the top do not go above this check these items once a week and your car will run fine

If you have put oil in it now and it seems to be OK , I mean the oil light does not come on in the dashboard, and the oil level is constant having checked it several times, why are you worrying, you probably did not dip your dipstick in far enough that time.
Once showing no oil is a fluke, several times showing no oil just put some in, no problem if nothing went wrong.

When you checked the oil was the car on level ground and the engine cold? ie you hadnt started it up? Answering no to both or either of the above questions will give you a false reading on your dipstick.
Your best bet is to try and keep the oil level between the upper and lower marks.Please dont try and run it with no oil in as that leads to a lesson in economics and the price of a replacement engine [ ie How Much!!!!!]

There are a couple of answers that could apply to this problem. first you could have a problem with the engine and it has started burning oil because it is getting passed all the seals which should prevent this. As you are driving just look in your rear view mirror, if there is a lot of blue smoke behind hind you you have your problem. The second is if you have damaged you sump on the engine and all the oil has drained out. either way you need someone who knows what they are doing to take a look before the problem becomes major(in this case major means expensive.)

Check for any leaks near the pan or valve cover or the filter itself. If thre seems to be no seepage, then have someone check your exhaust when the engine is cold. If blue smoke emits from the tailpipe upon starting, then you have worn valve guides or valve seals and you are burning the oil off. Usually on high mileage vehicles, this is normal. If you prefer, have the engine checked by a reliable mechanic in your neighborhood.Do a leakdown and compression test.

Had you just stopped your engine and where you on a slope. These 2 factors can give a false impression.
Always check your oil before you start your car and make sure it's on a level
make sure the oil level is between minimum and Max

Oil is used by the engine to lubricate surfaces. When their is no oil, parts rub against each other giving friction. Can damage parts other time. Check the oil regularly and you'll save on repair bills in the future

When you refil the oil did you use a good oil. (Brand named). It does pay to use a good oil. It can seal up small leaks. Keep an eye on it though and if I does drop again, get it looked at at a garage but get quotes first from atleast 3 garages as you can then play them off against each other and knock the price down. Tip: don't bother with dealerships as they'll charge you through the nose for hourily rate.

Depending on the make of vehicle it is not uncommon to see that once an engine begins to use oil (piston rings getting gummed up, valve stems seals going brittle etc) for the oil usage to start suddenly and increase at an exponential rate as it is getting burnt.
