Make a ghost image of the computers so they can be easily reloaded. You can restrict things as much as you want but with 5 sets of students they will mess it up.

The easiest way is just give them all limited accounts. They won't be able to do any real damage unless they are pretty savy. Your big problem with no domain controller is that there is not way to have a check if someone hacked out the admin password on each box. There are a couple of programs like Locksmith from Winternals that let you do just that. If you have any students that are currently working as a tech, they know about and have access to boot disks that can bypass the local security.

The quickest thing to do is just reload them with a Ghost image or an unattended install disk. That way you know that you erased anything that a student did. Students are naturally curoius--that's why they are students. And they will mess around with things they shouldn't. You may have to give them admin access depending on the class.
