"Blue collar" is a descriptive term widely used for manual laborers, as opposed to "white collar" which is used for office workers.
It is used as a generalization.
Wikipedia says the following:
White-collar workers perform tasks which are less "physically laborious" yet often more highly paid than blue-collar workers, who do manual work. They are salaried professionals (such as some doctors or lawyers), as well as employees in administrative or clerical positions. In some studies, managers are considered as part of the white-collar worker grouping, in others they are not. The name derives from the traditional white shirts worn by workers of such professions. The white shirts are easily soiled and therefore distinguish the workers who "do not get their hands dirty."

The terms refer to the jobs done by management and workers. The white collar jobs are management positions and office positions, whereas the blue collar workers are engaged in more manual work. I suppose it came about because management tended to wear white shirts and suits but the workers wore workshirts, often made from denim or drak material so the dirt or grease wouldn't show.

Blue collar generally refers to people that get paid for hard physical labor, and white collar to people that get paid for skills and experience that take less physical labor.

This is a way of differentiating office/management jobs from jobs in trades/skilled trades, etc. People who work in offices used to wear white shirts (hence the white collar) and people who work in factories, construction, skilled trades, etc. used to wear shirts or coveralls that were often blue or denim.

Blue collar = working class. Usually paid by the hour. Mechanics, plumbers, assembly liners, roofers, etc... (and they fix their own junk) Lots of them stink when they get home. They enjoy beer, sports, and often sport a beer belly. Loyal and friendly.
White collar = button pushers. Often salary workers.
Often in a cubicle. They push buttons and pencils and hire the blues to do their work (including personal) for them. They enjoy zima, talking a lot, and many of them look sickly and weak. Ambitious and orderly.
