Yeast consumes sugars and give off co2 and alcohol. The co2 makes breads rise. The alcohol makes wine alcoholic. And Beer is closed up in a container before it has finished converting the sugars trapping the co2 in the container thus giving beer alcohol and the fizz. There are different strains of yeasts. Some tolerate the alcohol better than others. Some wild yeast strains consume alcohol the byproduct of which is vinegar. Wine is very easy to make. Add your favorite juice sugar and yeast in a clean bottle with a balloon on top (to keep it sealed and allow for co2 released) wait 2 weeks and your done.
