I'm not sure if recommendations from carnivores count more than from vegans, but my fave Denver veggie restaurant is Watercourse, corner of 13th and Sherman. I used to work nearby and tried many of their menu items and thought most were quite delicious and reasonably priced. All levels of vegetarianism are offered, so it's sure to please the most demanding health-conscious patron.

Also, Little India at 6th and Sherman has a great selection of vegetarian dishes. Saag Paneer (spinach) is outstanding, among many great dishes. Their lunch buffet is only $7.50, the best deal in town!
