I stayed at the Castle Rock hostel. The location was fantastic, and a bunk bed was only 13 pounds. Staff will do your laundry for you for 2.50. They're very helpful, very real, and they have a well-developed sense of humor. I stayed at two other Macbackers hostels in different parts of Scotland, and I found this to be true at every one. They're like the Southwest Airlines of Scottish Hostels!
Castle Rock is a fun and happening place, with people coming and going all the time, but not really noisy. My roomies in the single-sex dorm were from Australia and India, and there were lots of folks from all over the world hanging out in the common areas.
There's a recommended Thai restaurant just down the block and streets full of eating and drinking options within a couple of blocks in any direction. Elephant House, the coffee shop where J.K. Rowling loitered writing much of the first Harry Potter book is just a few blocks away, for instance.

I used to use Smooth Hounds http://www.smoothounds.co.uk/ for my visits to the Fringe and tended to stay around the Mayfield Gardens area (not sure what the suburb is called). Used to pay around £40 per night.
Can't remember the name of the restaurants I went into so hopefully my directions will be good enough. There are several Chinese around the Grassmarket near the cliff face and castle wall. There is a reasonable Mexican on the right hand side as you walk down the Royal Mile just past Northbridge. There is an Indian restaurant called Kushi's which is on a side street off Nicholson Street a couple of streets past Chambers Street as you head out of the city.

Tanya, there are some swesome Bed & Breakfasts in and around Edinburough. Go online to find one. Beware tho, Scotland IS very expensive. Be sure to visit the castle then go out to the country side and visit some ruins..... so cool.

I just went there 3 weeks ago. Found a place called the claredon hotel. £100/night. Good, clean, good breakfast. Right off Prince St. Found it on hotels.co.uk, but check lastminute.com

you could try edinburgh self catering who rent apartments for a very reasonable fee beginning £50 per night based on 2 sharing. falts are very nice and well maintained.
