Do you mean to ask-- "What does it mean "to omit" a word from a sentence?" I don't know, I think that's what you were trying to ask. It means to leave out. If you are asking what word has the exact meaning "to omit a word from a sentence" I'd like to know if there is such a word with that specific meaning.

If you have a sentence with a missing word (say for a puzzle or a school test) it's called a cloze sentence. EG:
'A cloze sentence is one with a ___ word'
