I've gone on a few R&Rs there. Fun place. My and my now husband had our first holiday together there. It is best to get a hotel a long Jemariah beach for a nice holiday. I think the best sight to book on is www.southtravels.com. Best rates. It depends how much you want to spend. Obviously the Burj is the best and the hotels around there are very good too. A lot of people like the Dubai Marina Resort and Spa. I like the Palm Hotel in Jemariah. It isn't right on the beach but the price is good.
While you are there take her on a Dhow Dinner Cruise. It is very romantic. You can go on a desert safari too or a trip up to Al Ain. There are many nice restuarants. I really recommend the Japanese restaurant in the Emirates Towers.
You definitely have to take her shoping in the Gold Souk and the Malls are great. I really like Ibn Battuta.
For a fun day go to Wild Wadi.

Dubai is a wonderful place for a short vacation. There are many hotels and shops to visit. Take a desert safari, visit the gold souk and the malls (they are the best in the world). The food is incredible and the people are very friendly. I know you will have fun.

Dubai is grate city you should check this sites and it will give you same ideas on what to do, but try not to take your wife shopping too much or you will end up broke ;)
