It depends on the nature of the job - lab based or crime scene processing. For lab based work I'd be focussing on technical aspects of the work and GLP, for crime scene processing I'd be interviewing to assess the candidate's knowledge of protocol and crime scene management and their awareness of the importance of these. For some specific posts (fingerprint officer for instance) an aptitude test is often administered.
