I would have to say Pirates of the Caribbean because Klaus Badelt and Hans Zimmer really captured the feeling of the movie with the music.
But The Lord of the Rings Trilogy soundtrack is amazing!

In my opinion, it's Lord of the Rings Trilogy. I've read the book and watched the 3 movies 5-6 times. I haven't yet found a movie having soundtracks so catchy with the part of the storyline they represent. Think about the Tales of Khazad-dum, where Gandalf falls into the abyss fighting with Balrog. And the others had to flee without even having a chance to save him. The background music was just heavenly. The notes had something in it that can make you feel something very dear has gone, something very ominous is coming. Or, think about the music of Shire, when the movie starts and we see that Gandalf meets Frodo. The tone is so melancholy that you feel you're really in a peaceful village with fields of crops and happy faces everywhere. Even you can consider the music played when Aragorn, Legolas and Gimli - this trio starts their adventure to save Merry and Pippin. The sound has a rush of blood in it. Makes you feel to forget your pain, leave your unfulfilled desire and to fire up yourself to do something new, to face a new challenge. Thus, they are undoubtedly can generate the emotions they were meant to generate.
Don't know if you have seen the movies at all. But, as you like Star Wars I beive you didn't miss to taste LOTR. Or else, you should taste it immediately. :)
Btw, Star Wars music tracks are also awesome!

I think the best soundtrack to a film must be the soundtrack to Gladiator starting no other then Russel Crow. It is great becuase the music is relaxing and enjoyable at the same time. I get a lot of studying done under it.

I am addicted to fiddles & Celtic 'noise' and thus my candidate is 'The Last of the Mohicans'directed by Michael Mann and starring Daniel Day Lewis. Once one has watched the movie it is possible to simply listen to the soundtrack and watch it again. Each bit of music paints a picture each picture flows with the narrative of the film - - - one needs to hear only a few notes and one can instantly recall the scene. It is a very fulfilling sound track lush emotive inspiring.

Smokey and the Bandit, and the First Spiderman Soundtrack
because the smokey and the bandit soundtrack has good classic country music which is the best country music, plus Jerry Reed is the best singer turned actor
and the spiderman OST has Chad Kroeger's "Hero" and Sum 41's "What We're All About"

Star Wars is a very good soundtrack, but I'd have to say....
"Lady in the Water" Go to itunes and just listen to the samples. In my opinion, James Newton Howard is by far one of greatest composers of our time. The music is so enchanting and can fit almost any moment you feel like listening to music. Check it out for yourself! ^_^

My favorite is Boogie Nights. I love the progression of the music as part of the flow of time. I feel the same way about the tracks from Forrest Gump, but like the over all music better in Boogie.

Best motion picture soundtrack, in my opinion, would have to be...
"Walk The Line"
definitely.
Timeless classics with a new, young spin on it.
I love it because the songs that we all know and love as performed by Johnny Cash, June Carter Cash, Elvis Presley, etc still retain their magic, despite the new recordings.
