The Pekar Test is used to judge the color of flour and is conducted by pressing one or more flour samples on a paddle with a highly polished slick.
The Pekar Test is generally used for determining flour brightness. In this test, a control sample and a sample of flour that is to be tested are placed side-by-side on a spatula and the surface is smoothed and then the whole is moistened.
