Could invest up to 100k, less is better. Something that wouldn't require too many hours and not too much physical labor...any good ideas?

You could start with a large one and run it into the ground. Worked for George Bush with the Rangers. He traded Sammy Sosa.
But if your really planing to be lazy try buying foreclosures and flipping them. Great profit! Buy low sell low. You make your money when you buy so sell it quick and cheap. But buy it cheaper. Incorporate the business as an LLC. Watch out for the equity in the property. Make sure there is plenty of equity to work with. That's the hard part. Many propertys go unbid on and become REO's and short sales. Find pre forclosures and buy early. Almost nothing down is needed. Now is the best time to buy real estate as an investor. If you are buying cash or you are buying using OPM ( Other peoples money) you can get great deals. Make sure you buy with a 30% Loan to value ratio and get the Comps for that area ;the latest sales.

sounds like you've the resources, what you should do is get some pipe corrals, fence off some pasture land and do a touch horse boarding. As for the minature horse organisation, it could be not elementary. there is not any longer alot of call for immediately for the mini's, a minimum of no longer in CA, and there is alot that is going into breeding, searching after a pregnant mare, foaling, and so on., so your expenses might want to be intense and your reward might want to be low.

Coffee shop, but any legit small business that'd be worthwhile to both customer-base and owner will require a bit more than "not too many hours".
