Yellow green is best. Let them sit for a few days then you can eat them. If you pick one that's too green put it in a plastic or paper bag. Bananas make a gas called ethylene which speeds up the ripening of many fruits, including itself. (So, if you wanted, you could but a green tomato in there with the banana and the tomato would also ripen.)

between the colors of light green to yellow. you can pick them when they are at a darker green,like when you and if you plan on haveing they around awhile or shipping them.
