How about "You are So Beautiful" by Russell Watson.The lyrics are simple to understand yet so deep in meaning. In the song, the recording of his voice gives the song a little "echo-ey" quality to it. This trait makes the song very dreamy and romantic.

Bill Withers is a good choice. His songs Ain't No Sunshine, Just the Two of Us, and Lovely Day are nice, as is most of his music.

"Always On My Mind" the Ryan Adams version that he recorded on Jacksonville City Nights. Brilliant. Also check out his version of "Wonderwall" heard on Love Is Hell. The rest of that CD is also very pwerful and mellow.
