A 10w50 oil is thin, like a 10 w oil when cold and like a 50 w oil when it is hot. In theory both a 10w50 and a 10w30 oil should be the same thickness when cold. When hot, the 10w50 should be thicker or more viscous.

The problem with viscosity question is that you have nottold us what the type of vehicle is that you are working with, but here goes,if you have a truck with high miles you may want to consider a variable weight oil to quell the problem of viscosity, you could use a 10w -30 weight since this tends to be very good at start ups, when your vehicle needs it most.,using a full syntetic oil is a good start and you should keep the 10w-30 for better gas mileage, since you cannot prevent the wear that is already there on the engine, but can give you a longer engine life with extra care

They are pretty much the same. The base weight of the oil is 10. The 30 or the 50 are the viscosity index of the oil when warm. It is a factor of resistance to flow or shear.
It is wise to use the oil your manufacturer recommends for the engine. That is the oil it was designed to run with.
The only reason to change is if there is a specific problem you are trying to correct.

Good Luck
